“Power Outage” Stew

When our town was hit by a big storm and the electricity went out for two days, everything in our refrigerator and freezer had to be used or thrown away. My wife had the good sense to put a big soup pot on the stove and fill it with water and vegetarian broth. All the ingredients below were thrown in the pot and thirty minutes later we had enough healthy, vegetarian stew to last for several days of meals. We were even able to freeze several portions when the electricity finally came back on.

One large pot of vegetable broth (or chicken broth)
2-3 cups of frozen vegetables such as peas, carrots, green beans. and/or corn
1 lb. of Ives Veggie Cuisine brand vegetarian ground round (or the real thing if you must)
2 cups of macaroni or assorted pastas
2-3 cloves chopped garlic
1 teaspoon black pepper
1/2 teaspoon sage

Bring the pot of broth to a rolling boil. Immediately add the frozen vegetables, vegetarian ground round, garlic and spices and allow to simmer for twenty minutes. Add the pasta and continue to cook at a low boil for another 15 minutes. Season additionally to taste. Suitable for freezing.
