Family Style Potato Latkes

4 lbs. potatoes, peeled
1/3 cup grated onion
1-1/2 tsps. Garlic
2 beaten eggs
1 tbsp. Salt

1 tsp. pepper
1 tbsp. flour
1 tsp. baking powder
4 tbsps. olive oil

Combine potatoes, onions and garlic in a large mixing bowl. Mix ingredients thoroughly. Add all additional ingredients, except olive oil, and continue mixing well. Heat the olive oil in a non-stick pan under medium heat until hot. Using a ladle, add 2 to 3 tablespoons of mixture to hot oil. If oil is not hot enough, latkes will become soggy. Heat until golden brown on one side and then flip. Drain on paper towels. Garnish with apple sauce and/or sour cream.
